Veggie Delight – beetroot & blue cheese pie

We had quite a veggie filled week in our house this week. Pizza on friday, Mushroom and Truffle Risotto on Saturday and these little beauties on Sunday.
I found this recipe on the Sunday Brunch page on Channel 4’s website.
I do adore beetroot and happened to get some fabulous fresh beets at Elvetham Heath farmers market (Hampshire) on saturday. So they had to be made!
Its a nice simple recipe. The pastry is a suet pastry made with hot water and melted suet and adding it to the flour to make a pastry. Having never made pastry like this before I found it quite easy but having to add a little extra hot water than the recipe suggests to bring it together (judge by eye).
The filling was roasted beetroots, caramelised onions, thyme and lots of lovely blue cheese crumbled into the mix. Fill the pastry up and put the lid in and then oven for 45 minutes.
These pies were delicious and we had them served with mash and creamed leeks.
Soon to come on here will be some sweet treats. Nigella’s easy coffee ice cream and some lavender meringue experiments!
